All lovers of zucchini and squash love the summer months, when these vegetables are everywhere. When the time comes, what better dish to make than zucchini and squash au gratin? The delicious combination of fresh veggies and creamy flavors will make the perfect meal for a summer celebration of life.

What’s even better is that this dish is very easy to make. You just need to cut up your ingredients, throw them all together, and bake in the oven for 15 minutes. It’s perfect for a last minute summer BBQ or just a quick meal for the whole family to enjoy.

How to make Zucchini and Squash Au Gratin?

Preheat your oven to 450 F degrees.

Sauté shallots and garlic with butter in a skillet until shallots are translucent.

Add your zucchini, squash, heavy cream, salt, pepper, and parmesan.

Cook everything for 8-10 minutes.

Transfer the contents of the skillet to an oven-safe baking dish and sprinkle more cheese on top.

Bake for 10-14 minutes.

  • 1 lg zucchini, sliced
  • 1 lg yellow squash, sliced
  • 2 md shallots, minced
  • 1 tsp garlic (fresh or jar)
  • 1/2 c heavy cream
  • shredded cheese, just a handful to sprinkle
  • salt and pepper, to taste
  • sprinkle of oregano
  • Parmesan cheese, to taste
