Peach Cobbler Pound Cake

Peach cobbler and pound cake are two amazingly delicious desserts that we never thought we could combine… until we did! It’s crazy how well the two desserts go together. This recipe focuses on taking the flavors of peach cobbler and putting them into the form of a pound cake.

Think about your favorite sweet ingredients – vanilla, cinnamon, and nutmeg. All of these flavors mix very well with the natural sweetness and juiciness of peaches. You can serve this pound cake after dinner as dessert, eat it for breakfast, or pack it with you as a midday snack.

How to make Peach Cobbler Pound Cake?

Preheat the oven to 325 F degrees.

Mix brown sugar with half a teaspoon of cinnamon in a small mixing bowl.

Butter a 10” bundt pan and sprinkle it with the sugar mixture.

Mix peaches, cinnamon, and nutmeg in a medium bowl.

In a different bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.

In a different bowl, beat your egg whites until they’re firm.

Cream your butter and sugar at medium speed until the mixture becomes fluffy.

Beat egg yolks into the mixture.

Add peach schnapps and vanilla extract to the mix.

Slowly add the dry ingredients to the wet.

Fold your buttermilk and egg whites into the batter.

Pour the first half of the batter into the pan.

Add a layer of peaches over the batter.

Pour the second half of the batter over the peaches.

Bake the cake for an hour and a half.

Let the cake cool for 15 minutes.

Remove from the pan and garnish with peaches.

How to find out if your cake is ready?

You can use a cake tester that you can buy in most grocery stores. Alternatively, stick a toothpick in the cake while it’s still in the oven. If the toothpick comes out clean – the cake it fully baked through. If the toothpick has some batter on it, the cake needs more time.

Why is it called pound cake?

Traditionally, a pound cake contained a pound of flour, butter, eggs, and sugar, making the simplest cake ever. That’s not the case anymore and you can make a pound cake using any number of ingredients, but the name stuck.

Is cobbler the same as a crumble?

The two are somewhat similar, but they’re not the same. A crumble features a streusel topping, while a cobbler has some sort of a crust on top. That crust usually consists of batter or biscuits.
