Italian Drunken Noodles

by Rachel

That’s a peculiar name, right? Italian drunken noodles make an awesome dish for when you want to have a little bit of everything, but can’t settle on anything in particular. There is nothing that’s easier to cook than noodles. With the addition of bell peppers, Italian sausage, and parmesan cheese, these noodles will taste amazing.

Don’t be fooled, noodles are not the main event here! It’s all about the remaining ingredients, which are inexpensive, filling, and flavorful. You can serve this meal any night of the week. It’s the perfect comfort meal for when you’re feeling down, but it will certainly impress a surprise visitor too.

How to make Italian Drunken Noodles?

Crumble some spicy Italian sausage in a large pan with hot oil.

Let the meat brown and remove it from the pan.

In the same pan, cook some diced bell peppers with salt, Italian seasoning, and black pepper. Sauté for 2 minutes.

Add some chopped garlic to the pan and let it cook for a few minutes.

Add the white wine to the pan and let it reduce.

Add your diced tomatoes to the pan.

Add some olive oil, chopped parsley, and julienned basil.

Put the browned sausage back in the pan, fold everything together, and let it simmer for 4 minutes.

Take the pan off the heat and let it sit while you prepare the noodles.

Prepare your egg noodles according to package instructions and drain them.

Toss the noodles with the sauce to combine.

Garnish with basil, olive oil, and parmesan.

How can I improve my drunken Italian noodles?

The recipe is meant to make a quick and easy meal. If you don’t mind putting some of that elbow grease in, you can make it even better! I recommend using fresh tomatoes instead of canned diced tomatoes. Ripe tomatoes are sweeter and easier to make into a sauce.

What kind of noodles should I use in drunken Italian noodles?

I recommend using egg noodles. They have a relatively neutral flavor, which allows the taste of the seasoning and Italian sausage to pop. Of course, if you’d like to shift the focus to the pasta, you can use pappardelle, linguine, or spaghetti. Shorter shapes like penne could work too, as they would make excellent vessels for the sauce.

Why are drunken noodles called drunken noodles?

The name comes from old myths and stories behind the originally Thai dish. Legends claim that sailors would try to quench their thirst with these noodles. The original recipe calls for quite a lot of spice, so you can imagine their attempts were unsuccessful!
