How do you make sure you don’t cut through your hasselback potatoes?

In order to avoid cutting through the potato when you’re making incisions, place the potato in between two chopsticks. That will not only stabilize the potato, but also offer some guidance for the knife. This way you will feel the chopsticks at the bottom and won’t be able to cut any further into the potato.
