Easy Burrito Casserole

by Rachel

Burritos originated in Mexico and became a big part of North American cuisine. The dish is entirely customizable; make chicken, beans, pork, or beef the main ingredient. The dish gains its unique taste from the taco seasoning mix, which is often complemented with cilantro, lime, and Pico de Gallo.

For an Americanized version of the burrito, make a burrito casserole! The dish features the same ingredients, requires very little preparation, and only takes about half an hour to bake in the oven. The burrito casserole is a unique take on the traditional dish. If Mexican and Tex-Mex feature your favorite comfort meals, you’re going to love this one.

How to make an Easy Burrito Casserole?

Brown your beef and onions in a skillet. Drain the grease.

Add taco seasoning and refried beans to the skillet. Stir them in.

In a large bowl, mix cream of mushroom soup and sour cream.

Take a casserole dish and spread half of the soup and sour cream mixture in the bottom.

Take 3 tortillas, tear them up into pieces, and layer them over the soup and cream mixture.

Layer half of the meat mixture over the tortillas.

Add a layer of cheese on top of the meat.

Repeat all the layers one more time.

Bake the casserole at 350 F degrees for 20-30 minutes.

How can I tweak the burrito casserole recipe?

Just like in a Mexican restaurant, you can have different choices. Start with the meat: do you want beef, chicken, or maybe even beans? Then, you can add corn or tortilla chips to your mix. Add jalapeños for a spicy kick. Finally, you can serve the dish with sour cream, Pico de Gallo, salsa, or any dip of your choice.

Can I serve the burrito casserole at a party?

The beauty of this dish is that it’s absolutely universal. You can have a burrito casserole for dinner, use it as your comfort meal on a cozy day in, or serve it when you have guests over. The dish can be served with dips and tortilla chips as an entree or appetizer.

How long do I have to bake the burrito casserole for?

On average, you have to bake the dish for about 20-30 minutes. Under-baking the casserole is not a problem, as the meat is already almost completely cooked through by the time it enters the casserole dish. You need to get the cheese to the right baked consistency for consumption. If you’re not sure about the time, check the dish after 20 minutes in the oven to make sure the cheese is not overcooked.
