Doritos Chicken Casserole

Casseroles have been our mothers’ saviors for many years. They are easy to make, filling, and delicious. With a casserole, you can satisfy even the pickiest eater. Besides, once you get comfortable with your oven, you can put anything in there. Fill your casserole dish with the ingredients you have at home, put some cheese on top, and it’s a casserole!

This one is delicious and easy to make too. It’s the perfect lazy dinner that isn’t so lazy at all. Your family will think you spent hours in the kitchen, when all you really have to do is add the ingredients to the dish and go about your day.

This casserole is extra special because you can use leftover chicken or turkey, or pick up a rotisserie chicken from the supermarket.

How to make a Doritos Chicken Casserole?

Preheat your oven to 350 F degrees.

Mix together shredded chicken, cheese, cream of chicken soup, milk, sour cream, Ro-Tel tomatoes, and taco seasoning mix in a large bowl, and stir until combined.

Grease your casserole dish.

Add a layer of crushed Doritos at the bottom of the dish. On top, add a layer of chicken mixture. Repeat with more crushed Doritos and chicken mixture.

Sprinkle cheese on top.

Cover the dish and bake for 30-35 minutes.

Once the dish is ready, remove it from the oven, uncover it, and add some chopped lettuce, diced tomatoes, and crushed Doritos on top.

Can I alter the Doritos chicken casserole recipe?

Of course! When it comes to casseroles, you can do what your heart desires. WIth this dish, you’ve got all the creative freedom in the world. Add corn, beans, and peppers. Use salsa instead of Ro-Tel tomatoes. The possibilities are endless!

How can I make my Doritos casserole less spicy?

Most of the spice in this casserole comes from the Ro-Tel tomatoes. If you want to make your casserole less spicy, use mild Ro-Tel. That’s the mildest option.

What chicken should I make the Doritos casserole with?

We recommend you buy a rotisserie chicken, as that’s the easiest solution. Since the chicken is already cooked, you don’t need to spend extra time preparing it. If you have some leftover chicken, that would work too!

Ingredients

  • 3 c. shredded cooked chicken
  • 2 c. shredded Mexican cheese blend (divided)
  • 1 (10 oz.) can cream of chicken soup
  • 1/2 c. milk
  • 1/2 c. sour cream
  • 1 can Ro-Tel diced tomatoes with green chilies drained
  • 1/2 packet taco seasoning mix
  • 1 lg. bag Doritos
  • Chopped lettuce
  • Diced tomato

Instructions

Preheat the oven to 350 degrees.
In a large bowl, mix together the shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-Tel tomatoes, and taco seasoning mix. Stir well.
Grease a 2-quart casserole dish.
Layer half of the crushed Doritos across the bottom of the dish.
Top with half of the chicken mixture.
Add another layer of crushed Doritos, and then add another layer of the chicken mixture.
Top with remaining 1 cup cheese.
Cover and bake for 30-35 minutes, until bubbling hot.
Remove from the oven and top with chopped lettuce, diced tomato and more crushed Doritos.
