Peanut Butter No-Bake Cookies

Imagine you have a dinner party that is fast approaching and you have to make dessert. Unfortunately, the oven is taken with the preparation of the main dish, so you cannot use it to make your dessert. There is only one thing you can do. Make a no-bake dessert.

These peanut butter no-bake cookies are an excellent solution for when using the oven is just not an option. After you taste them, you will never want to use the oven again anyway! Their soft texture and nutty taste will remind you of your childhood, when the days were long and the sun was always bright.

How to make Peanut Butter No-Bake Cookies?

Combine sugar, milk, and butter.

Melt the mixture over medium heat, bring to a boil, and simmer for a minute.

Add peanut butter, vanilla, and salt to the mix. Add in the oatmeal.

Stir until smooth.

Use a spoon to prepare individual cookies and let them rest on parchment paper.

Let them sit for 45 minutes before serving.

How do you make no-bake cookies soft?

The good news is, making them soft isn’t difficult because you’re not putting them in the oven. That’s why bringing the mixture to a boil and letting it simmer for one minute is so important. You can also microwave the mixture to make it even softer. If you follow the recipe closely, your cookies will be very soft.

If you’ve started to prepare your individual cookies and find the cookies spreading on the parchment paper, stop for a second. The cookie mix is not cool enough yet. Let it cool for a few minutes more before you resume the process. Once they are a bit cooler, they won’t be spreading as much and you can form your cookies.

Yes, you can freeze these peanut butter no-bake cookies. Before you freeze them, wait until they are completely set. That means waiting for at least 45 minutes after you’ve put them on the parchment paper. Then, collect the cookies and put them in an airtight container. Put them in the freezer and they will be good for another month or so!

Can you use vegan butter and almond or soy milk and have the same result?
