Banana Bread Brownies

by Rachel

Do you have bananas going brown in your kitchen? It’s about time you put those bad boys to good use! What do we do with soft and overripe bananas? That’s right, we make banana bread. This variation is a combination of banana bread and brownies. Beware, as the recipe is not vegan, unlike many variations of banana bread.

These brownies make a great dessert, breakfast, or snack for any member of the family. Take them to school or work and surprise your colleagues. Enjoy them for up to 5 days after baking. Brownies go well with a hot cup of coffee in the morning or tea in the afternoon.

How to make Banana Bread Brownies?

Preheat your oven to 375 F (190 C) degrees.

Spray a 9×13 inch baking pan with non-stick cooking spray.

Mix sugar, sour cream, softened butter, and eggs in a bowl using an electric mixer.

Add mashed bananas and vanilla extract and mix until combined.

Add all-purpose flour, baking soda, and salt to the batter and mix until combined.
Add chopped walnuts to the batter.

Pour the batter in the baking pan.

Bake for 20-30 minutes.

Remove the pan from the oven and let the brownies cool.

Melt butter in a saucepan and heat until it turns a medium brown color.

Take the butter off the heat and add powdered sugar. Stir the mixture until combined.

Mix in milk and vanilla extract.

Pour the resulting mixture over the brownies to coat the top.
Let the brownies cool completely before you cut and serve.

How long do banana bread brownies need to cool for?

Before you pour the frosting over the brownies, you just need to give them a few minutes. 15 minutes should suffice. After you’ve poured the frosting over them, you should let them cool for a bit longer. Usually, 1 or 2 hours is enough. If you are not pressed for time, you can let them cool overnight.

Can I store brownies in the fridge?

You can, but you don’t have to! Your banana bread brownies will survive for up to 3 days at room temperature. That way they won’t lose their texture and get hard. If you’d like to give them a little bit of a longer life, you can store them in the fridge for up to 5 days. Put them in an airtight container or sealed plastic bag before putting them in the fridge.

What can I use instead of walnuts?

Walnuts are there purely for the flavor and crunch; they can easily be replaced. If you don’t like walnuts specifically, you can add any other nuts, such as peanuts or pecans. Chocolate chip cookies will do well too!
