Broccoli, Rice, Cheese, and Chicken Casserole

A casserole is the perfect meal. It is a full meal that doesn’t require any sides or appetizers. You can even skip dessert because this casserole is so filling! The best part is, it is incredibly easy to make. All you have to do is pre-cook the rice and dump all the ingredients in a baking dish. The oven will do all the work for you. Before you know it, the casserole will be ready to serve!   This dish will feed the whole family and impress even the pickiest eaters. It has everything you need: fiber, protein, and lots of flavor! You can skip the onion, though I believe it is actually the most important ingredient.

How to make Broccoli, Rice, Cheese, and Chicken Casserole?

Preheat the oven to 350 F degrees.

Boil some water in a medium saucepan. Pour in the rice, cover, and remove from the heat.

Let the rice stand for 5 minutes.

Mix the rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese in a 9×13-inch baking dish.

Bake for half an hour or until the cheese melts. Stir halfway through.

Can I make a casserole for one?

Of course! To make a casserole for one, you can simply reduce all the ingredient measurements. The hard part is finding a small baking dish. If you have one, then pop your ingredients in there and bake your casserole. If you make a little too much, you can freeze the rest and eat it later.  

How to freeze a casserole?

To freeze a casserole, you have to wait for it cool down completely. Once it’s cooled down, place the remainder of the casserole in an airtight container and freeze. It will last for a few months in the freezer. When you want to have a portion, you should let it thaw in the fridge before warming it up.  

Can I make this casserole healthy?

It depends on how you define a healthy casserole. I would recommend cutting the amount of cheese in half or using low-fat cheese. You can also substitute all the canned ingredients for fresh ones. Finally, add as many veggies as you possibly can.
